Where exactly does an antioxidant break the chain?

Degradation in fat is not a single event but a self-sustaining chain reaction. BHA and BHT enter at its third step and terminate it.

    Initiation

    RH → R•

    Heat, light, oxygen and metal ions abstract hydrogen from a fatty acid, forming the first free radical.

  2. 02

    Propagation

    R• + O₂ → ROO•

    ROO• + RH → ROOH + R•

    Each radical creates the next. The reaction feeds itself; peroxides accumulate and vitamins are destroyed.

  3. 03

    Termination

    ROO• + AH → ROOH + A•

    The antioxidant (AH) donates its phenolic hydrogen. The resulting A• radical is stable and cannot continue the chain.

Technical background

Oxidation consumes nutritional value invisibly

Unsaturated fatty acids in feed undergo autoxidation under the influence of oxygen, heat, light and metal ions. This chain reaction first forms peroxides, then aldehydes and ketones, resulting in rancid odour, colour loss and reduced palatability.

The real loss, however, is nutritional rather than sensory. Oxidation destroys vitamins A, D and E, carotenoids and essential fatty acids. Even when the ration is correct on paper, the nutritional value the animal receives falls, and feed intake and performance decline.

Phenolic antioxidants such as BHA and BHT stop the reaction by donating hydrogen to the free radicals that initiate the chain. Added at the correct dosage and at the right stage of production, they extend the induction period of the feed significantly.
