Citric Acid — Antioxidant Synergist
An organic acid that enhances the effectiveness of phenolic antioxidants. It chelates trace metals (iron, copper) that catalyse oxidation, providing a synergistic effect with BHA, BHT, TBHQ and PG.
Overview
Although not an antioxidant in itself, citric acid significantly enhances the effectiveness of phenolic antioxidants (BHA, BHT, TBHQ, PG) by chelating trace metal ions (iron, copper) that accelerate oxidation. It is therefore widely used as a synergist component in antioxidant blends.
It is highly soluble in water and is typically incorporated into the solvent system before dispersion into the fat phase, or added as a separate component in premix formulations.
It is defined as a food and feed additive under the code E330 and can also be used as an acidity regulator. Use levels should be set according to the target product group.
