PG — Propyl Gallate
A synthetic antioxidant with a gallic acid ester structure. It acts synergistically in animal fats and in blends with BHA/BHT, and is typically formulated together with citric acid.
Overview
PG is a synthetic phenolic antioxidant obtained by esterifying gallic acid with propanol. It is used in animal fats such as lard and poultry fat, in vegetable oils and in essential oils.
Its effectiveness is limited when used alone; it shows a marked synergistic effect when combined with BHA, BHT or TBHQ. Because it can form dark-coloured complexes with metal ions (particularly iron), formulating it together with a chelator such as citric acid is recommended.
It is listed as an antioxidant under the code E310. Maximum use levels are defined for some food categories; checking the legislation of the target product group and market before application is recommended.

Storage
